Crock-Pot Minestrone

Recipe from Crock-Pot Cookbook and Owner’s Manual:

1 onion, chopped
2 carrots, sliced
1 zucchini, diced
1 cup cabbage, shredded
2 cloves garlic, minced
2 15 oz. cans kidney beans, drained
2 14 1/2 oz. cans beef broth
1 28 oz. can crushed tomatoes
1 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. black pepper
2 cups cooked elbow macaroni
1/4 cup Parmesan cheese, grated

Combine all the ingredients in the Crock-Pot except for the macaroni and Parmesan cheese. Cover; cook on Low for 7-9 hours or on High for 4-5 hours. Stir in the macaroni and parmesan cheese.
